Chocolate demonstration
Catering & Hospitality students at Herefordshire College of Technology learnt how to create a range of mouth watering chocolate delicacies from ex HCT student Jacqueline Keenan, recent winner of the Gold Award at the Restaurant Show for Prada Chefs in Birmingham.
Pastry chef, Jacqueline who specialises in chocolate, explained how it can only be grown 20 degrees north or south of the equator and that just as with fine wine the flavour varies from country to country. The very best chocolate can cost up to £6 for just 50 grams. Using a Guanaja chocolate she created 'Delice of Verona' and some very colourful raspberry chocolates which resembled marbles. Needless to say all, the examples were snapped up immediately and this was one lesson that the students digested very quickly indeed!
