Creating Culinary Delights...
Three Catering and Hospitality students, Nathan Mizen, Scot Davies and Katie Lane (all NVQ level 3) are perfecting their culinary skills ready for the Three Counties Show at Malvern. Accompanied this year by two Food Service (NVQ 2) students, Peter Buckley and Neil Goulding, the students will be competing in the coveted Inter-college competition.
The competition will be judged over the three days, 13th-15th June and will be held in the Three Counties Committee and Corporate Hospitality tent.
Colleges from Hereford, Worcester and Gloucester are taking part and judges will be looking for best presentation, taste, use of local produce and menu composition.
HCT’s delicious menu will comprise;
- Herefordshire Pea and Leek Tart with Corbray Farm Glazed Asparagus and Pea Shoot Salad
- Wye Valley Pan Fried Salmon, Little Gem, Broad Beans and glazed Shallots with Elderflower fritters and Champagne – made with Wilde Elderflowers, handpicked from the Herefordshire Countryside
- Griddled Local Summer Vegetables with Finns Cows Cheese and a Rocket and Herefordshire Cider Vinaigrette
- Forge Cottage Cassis and Blackcurrant Mouse with a Cassis Poached Pear
