Competition 'Hots Up' in the Cider Orchard Restaurant

Caitlin Bissell with her winning entriesLevel 2 Hospitality and Catering learners have been keeping their skills sharp with the annual internal competition, the Joel Lawrence Memorial Trophy. Created just over two years ago the award remembers a fellow learner who sadly passed away from cancer.

This year’s winner Caitlin Bissell commented, “I’m happy and shocked to have won! There is a really high-standard of skills within our group at the moment because of the local and national competitions as well as recent exams; everyone is really pushing themselves. I am so pleased that my dishes were chosen out of so many entries.”

Caitlin’s winning culinary creations were formed from a selection of local produce from which the young chefs had to formulate their own individual main course and dessert. Caitlin opted for chicken with a mushroom and white wine sauce with glazed carrots, sauté potatoes and a heart-shaped crouton. To follow she chose a chocolate and kirsch mousse with a cherry compote and coulis.

Local restaurant owner, Stewart Leggett from The Stewing Pot in Hereford, judged the competition with Course Tutor, Les Brown and commented, “The balance of flavours in Caitlin’s dishes worked brilliantly, each flavour bringing out another. The chicken was cooked correctly with a great flavour. It was a tough competition to judge as everyone put in so much; they should all be very proud of their entries.”
